Ingredients:
- 1 lb L2 Ranch grass-fed ground beef
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 8 small corn tortillas
Fresh Salsa:
- 2 tomatoes, diced
- 1/2 red onion, finely chopped
- 1 jalapeño, seeded and finely chopped
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- Salt to taste
Instructions:
- Heat the olive oil in a skillet over medium heat. Add the onion and garlic, and cook until softened.
- Add the ground beef, cumin, chili powder, salt, and pepper. Cook until the beef is browned and cooked through.
- While the beef is cooking, prepare the fresh salsa by combining tomatoes, red onion, jalapeño, cilantro, lime juice, and salt in a bowl. Mix well.
- Warm the tortillas in a dry skillet or microwave.
- Fill each tortilla with the cooked beef and top with fresh salsa.
