Grass-Fed Beef Tacos

Ingredients:

  • 1 lb L2 Ranch grass-fed ground beef
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 8 small corn tortillas

Fresh Salsa:

  • 2 tomatoes, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt to taste

Instructions:

  1. Heat the olive oil in a skillet over medium heat. Add the onion and garlic, and cook until softened.
  2. Add the ground beef, cumin, chili powder, salt, and pepper. Cook until the beef is browned and cooked through.
  3. While the beef is cooking, prepare the fresh salsa by combining tomatoes, red onion, jalapeño, cilantro, lime juice, and salt in a bowl. Mix well.
  4. Warm the tortillas in a dry skillet or microwave.
  5. Fill each tortilla with the cooked beef and top with fresh salsa.
